Stuffed Peppers with Cauliflower Rice

Use this delicious recipe to whip up a quick and easy low carb dinner. Instead of filling up on pasta or rice, this keto- and paleo-friendly recipe satisfies Italian food-loving taste buds.

Ingredients:

  • 4 to 6 bell peppers, cored
  • 1 pound organic ground hamburger meat
  • 1 can organic diced tomatoes
  • 1 can tomato paste
  • 1 medium yellow onion, diced
  • ½ tablespoon fresh basil
  • ½ tablespoon fresh oregano
  • 1 tablespoon minced garlic
  • 1 bag frozen cauliflower rice or 2 cups homemade cauliflower rice
  • ½ cup organic mozzarella cheese, shredded
  • Olive oil (enough to coat baking dish)
  • Salt and pepper to taste

Instructions:

  1. Cook hamburger meat with onions until meat is brown. Then, drain off the grease.
  2. As the meat is cooking, simmer the peppers in a pain for about 5 minutes to soften. Also, prepare the cauliflower rice per the instructions on the bag.
  3. Combine all ingredients into a pan except for the bell peppers. Simmer for 5-10 minutes.
  4. Coat a baking dish with olive oil.
  5. Add the peppers to the dish.
  6. Fill each bell pepper with the hamburger mixture. (Be sure to fill to the rim of the bell pepper.)
  7. Sprinkle the top of each bell pepper with salt and pepper. Then, sprinkle with the mozzarella cheese.
  8. Bake at 350 degrees for 20 minutes.
