Use this delicious recipe to whip up a quick and easy low carb dinner. Instead of filling up on pasta or rice, this keto- and paleo-friendly recipe satisfies Italian food-loving taste buds.
Ingredients:
- 4 to 6 bell peppers, cored
- 1 pound organic ground hamburger meat
- 1 can organic diced tomatoes
- 1 can tomato paste
- 1 medium yellow onion, diced
- ½ tablespoon fresh basil
- ½ tablespoon fresh oregano
- 1 tablespoon minced garlic
- 1 bag frozen cauliflower rice or 2 cups homemade cauliflower rice
- ½ cup organic mozzarella cheese, shredded
- Olive oil (enough to coat baking dish)
- Salt and pepper to taste
Instructions:
- Cook hamburger meat with onions until meat is brown. Then, drain off the grease.
- As the meat is cooking, simmer the peppers in a pain for about 5 minutes to soften. Also, prepare the cauliflower rice per the instructions on the bag.
- Combine all ingredients into a pan except for the bell peppers. Simmer for 5-10 minutes.
- Coat a baking dish with olive oil.
- Add the peppers to the dish.
- Fill each bell pepper with the hamburger mixture. (Be sure to fill to the rim of the bell pepper.)
- Sprinkle the top of each bell pepper with salt and pepper. Then, sprinkle with the mozzarella cheese.
- Bake at 350 degrees for 20 minutes.
