Ingredients:
- 3-4 sweet potatoes, peeled and cut into cubes
- 1-2 red apples, cut into cubes
- 1 red onion, diced
- 3 tablespoons butter, cut into cubes
- Salt and pepper to taste
- Fresh parsley for topping
Instructions:
- Combine sweet potatoes, apples, and onion in a baking dish.
- Add butter, salt, and pepper.
- Stir well.
- Cover with aluminum foil and bake for 45 minutes to one hour (until sweet potatoes are tender).
- Remove from oven.
