Sweet Potato and Apple Side Dish

This healthy sweet potato and apple side dish has a sweet and savory taste that will remind you of holiday meals with the family – without leaving you feeling stuffed! Perfect served as a side for pork or chicken dishes.

Ingredients:

  • 3-4 sweet potatoes, peeled and cut into cubes
  • 1-2 red apples, cut into cubes
  • 1 red onion, diced
  • 3 tablespoons butter, cut into cubes
  • Salt and pepper to taste
  • Fresh parsley for topping

Instructions:

  1. Combine sweet potatoes, apples, and onion in a baking dish.
  2. Add butter, salt, and pepper.
  3. Stir well.
  4. Cover with aluminum foil and bake for 45 minutes to one hour (until sweet potatoes are tender).
  5. Remove from oven.
  6. Stir well and then top with fresh parsley.
  7. Bake for an additional 15 minutes.
  8. Cool and serve.
